Dried bonito flakes
These are standard bonito flakes. The dashi stock has a strong bonito flavor and is not too strong, so they can be used in a wide variety of ways, such as as a topping, furikake, or tsukudani.

Honkarebushi
The surface of dried bonito flakes is molded and aged. The fat is broken down to create a clear, elegantly fragrant broth, making this the highest quality dried bonito flakes.

Mackerel
Although its aroma is not as strong as that of bonito flakes, it is high in fat and has a very strong umami flavor, so it is often used together with bonito flakes in soba noodle soup stock and other dishes.

Muneta bonito flakes
These dried bonito flakes are made from dried bonito flakes, which are produced in Tosashimizu, Kochi Prefecture, a major producer of dried bonito.They are rich in blood and can be used to make a rich broth, making them ideal for soba soup stock.

Dried sardines
Like mackerel flakes, it is high in fat and the broth tends to be a little cloudy, but it is packed with the umami of the fish and is perfect when you want a punchy flavor.

We have built long-standing relationships of trust with several kushi raw material manufacturers and specialized trading companies in major domestic production areas.In addition to doing business with kushi manufacturers and trading companies in Shizuoka Prefecture, mainly in Yaizu, and the Kyushu region, we also do business with several wholesalers that handle kushi produced overseas.
Having multiple suppliers like this allows us to create a system that is less susceptible to the effects of bad weather or declining catches, and is a strength that allows us to deliver ingredients of consistent quality to our customers.

We place importance on planned inventory management to ensure a stable supply of raw materials. By maintaining appropriate inventory levels while taking into account seasonal fluctuations in demand and market trends, we can flexibly respond to sudden increases in demand and periods of poor catches.
We strive to maintain ample stock of key raw materials in particular, so as not to affect our customers’ production plans. We also utilize refrigerators at all three factories to spread out the risk of storing products in one place.
